Dietitian’s suggestion:

Scampi ordinarily refers to shrimp protected in butter. This model replaces fifty percent of the butter with olive oil.

Serves 6


  1. eight ounces uncooked spaghetti
  2. 3 tablespoons olive oil, divided
  3. two kilos big shrimp, peeled and deveined
  4. one tablespoon minced garlic
  5. one/4 cup chopped shallots or environmentally friendly onions
  6. two tablespoons lemon juice
  7. one/4 cup chopped parsley
  8. one/4 teaspoon salt
  9. Floor black pepper, to taste
  10. two tablespoons brandy or sherry, optional
  11. two tablespoons butter


Fill a big pot 3/4 total with drinking water and bring to a boil. Increase the pasta and cook in accordance to package instructions. Drain the pasta totally.

Although the pasta is cooking, heat one tablespoon olive oil in a big saucepan in excess of medium heat. Increase the shrimp and cook for two to 3 minutes on each and every aspect. Transfer shrimp to a bowl and continue to keep heat.

Increase garlic and shallots to the saucepan and cook until finally fragrant, about ten seconds. Increase lemon juice, parsley, salt and pepper, and brandy or sherry, if desired.

Take away the saucepan from the heat. Increase the cooked shrimp plus two tablespoons olive oil and two tablespoons butter. Toss until finally shrimp are coated with sauce.

Divide pasta among the warmed personal bowls. Best with shrimp and sauce. Provide immediately.
